The Cellar Manager/Production Assistant works under the supervision of the Head Distiller. Primary responsibilities focus on the overall production and monitoring of fermentations, ensuring efficiency and maintaining the highest standards of quality control. This position will also assist with distillation, barreling, and processing operations.
High Wire Distilling Co. is a pioneering, independently owned local distillery known for its Jimmy Red Bourbon, Hat Trick Gin, and other small batch spirits. We are actively seeking a full-time Cellar Manager/Production Assistant to help produce our award winning spirits. Primary Production Duties:
• Milling and Mash Production- Maintaining a consistent process with careful documentation, troubleshooting any issues
• Fermentation- Monitoring fermentations and measuring productivity, keeping daily records
• Spent Grain Removal- Facilitating mash removal, solids separation, and farm pick-up
• Barreling- Priming barrels for filling, filling barrels, labeling to standards, and storing appropriately
• Cleaning and Sanitizing- Maintaining all tanks and equipment to the highest level of cleanliness and sanitation, keeping production area clean, orderly, and “tour ready”
• Maintenance- Monitoring all equipment on a regular basis to maintain a safe and efficient work environment, identifying and troubleshooting issues, notifying supervisor if a problem is identified
• Safety- Regularly reviewing and adhering to safety protocols, Safety Data Sheets, staying up to date on safety training
Other Duties:
• Distillation- Assisting with all aspects of distillation, tasting of spirits for quality analysis, and making appropriate cuts based on data, appearance, smell, and taste
• Proofing- Assisting with proofing process for record keeping, bottling, and barreling with close attention to detail
• Bottling- Assisting with bottling as needed
• Purchasing- Assisting with raw material inventory, purchasing, following up on orders
• Order Fulfillment- Assisting with accurately building and shipping customer orders
• Tours- Leading distillery tours for customers when needed

• Minimum Experience Required: One (1) year experience in a commercial distillery or brewery
Physical Demands:
• Frequently stand for the duration of the shift. This position requires the ability to routinely and repeatedly lift up to 55 pounds and maneuver up to 170 pounds.
• Use their hands to perform fine manipulation and reach with hands and arms
• Use senses to identify product deficiencies (color, smell, taste)
• Proper and safe handling of hazardous materials and operation of complex moving machinery
• Tolerance for periodic exposure to a wet environment in high and low temperature ranges
